I have a butternut squash. I've never cooked this before, but I've had great squash stuff made by other people. I'm making something with it tonight or tomorrow. If you have a good butternut squash recipe, please post it! Or point me to it or something. Thanks!

Man... I have had bad luck with every squash I've ever tried to cook. I don't know if I just don't know how to pick a good one or what, but they always turn out either stringy or too hard...

But, for what it's worth, my advice is, whatever you do, it should include brown sugar, which is yummy :)

[livejournal.com profile] silas7 had a good roasted butternut squash recipe that he's used when we had folks over.

Cut squash into chunks about an inch or two in size and follow a recipe similar to roasting potatoes or carrots. Place in a roasting pan with a little bit of oil and herbs (traditional winter vegetable herbs like thyme work, tarragon and rosemary less so), shake to coat and roast at 425 until browned and caramelized. About 45 minutes to an hour. It's done when it's almost meltingly tender and should have a nicely browned crust.

I love just baking the squash liberally covered in olive oil and garam masala and black pepper--the spices are perfect on the sweet squash!

Squash is always yummy. butternut are very nice, so are spaghetti squash.

[livejournal.com profile] blackamethyst has introduced me to many vegetables that I never had growing up.

I'll need to point her toward that Epicurious stuff.

I always liked it the way my grandma did it// cut the squash in half, scoop out the goop, put a little butter on it, and sprinkle on some nutmeg. Makes your whole house smell good and it's awesome eating!
