Jan. 14th, 2005 03:58 pmI have a butternut squash. I've never cooked this before, but I've had great squash stuff made by other people. I'm making something with it tonight or tomorrow. If you have a good butternut squash recipe, please post it! Or point me to it or something. Thanks!

Date: 2005-01-14 09:26 pm (UTC)Cut squash into chunks about an inch or two in size and follow a recipe similar to roasting potatoes or carrots. Place in a roasting pan with a little bit of oil and herbs (traditional winter vegetable herbs like thyme work, tarragon and rosemary less so), shake to coat and roast at 425 until browned and caramelized. About 45 minutes to an hour. It's done when it's almost meltingly tender and should have a nicely browned crust.
